It’s been awhile, hello! Life has been moving at lighting speed it seems and I can’t believe that it’s November. Charlie is seven today and it’s hard to wrap my head around that. I really wish time would slow down in all areas. I’ve decided to put this Sunday Happy on Substack now, along with on here. I really enjoy reading/listening to other Substack posts, so I hope you’ll join me.

I’m going to start slowly pulling out our Christmas decorations this coming week. I used to never decorate until after Thanksgiving, but something in me changed a few years ago. It takes so long to get everything set up, why not enjoy it for two months?

Over the next two weeks we have some home things happening, painting in our bedroom, and furniture being delivered. I’m so grateful to my friend Lindsay from Hoffman Interiors for helping us design some new spaces in our home. We are adding a lot more color and pattern, I can’t wait to see it all together.

On top of house things going on, I’m really hoping I can make time to go out to the garden this coming week. It needs some TLC and I have to plant all of my bulbs and corms, as well as my winter greens. I usually use a makeshift hoop house for my greens, but I’m going to order one of these instead.

Moving onto the meal plan, here’s our menu for this week. Have a great week! – Ash

M: Mushroom & Pork Bolognese, this recipe is adapted from the Sprouted Kitchen, but basically it’s a traditional bolognese with some sautéed mushrooms mixed in with the pork. Adds so much flavor to the traditional bolognese. I’ll be serving this with roasted shredded Brussel sprouts on the side & some homemade focaccia.

T: Taco Bowls, I just sauté ground chicken with taco seasoning and serve in bowls with black beans, guacamole, salsa and shredded cheese.

W: Date Night. Chicken and Fruit for the kids

Th: Sloppy Jane’s

F: Pizza Night, lately I’ve been making Naan Pizzas for the kids and a new pasta dish for T & I. We put a movie on and we also get a mini date night out of it.
